Functional Mushrooms are rising up in a wide variety of products.  From mycelium to brain health, the future of functional mushrooms seems everywhere, but which trends have “legs”, and which ones will end up as afads?

There has been a shift in consumer behavior towards greater health consciousness, with many turning to the benefits of functional mushrooms.  Over the last few years mushrooms have become popular as functional ingredients in many categories and products, from plant-based milks&creamers to bars and RTD beverages. Expo West showcased quite a few mushroom products this year.  According to Market Watch,the global functional mushroom market was valued at $26.7 Bn in 2021 and the market is expected to grow at a CAGR of over 10% from 2022 to 2030.The North America food & beverage market is expected to be a $20 billion market cap by 2030.

The functional mushroom market which includes turkey tail, reishi, cordyceps, lion’s mane, shitake, chaga, maitake and more, is based on their functional properties.  Outside of supplements, mushrooms have been showing up as a functional ingredient across food and beverage, such as bars, coffee, plant based milks, chips, crackers, pizza toppings, meat balls and more and a range of beverages.
